This work shows the successful synthesis of the derivatives of the polysaccharides and the preparation of nanoparticles using these hydrophobic and hydrophilic modified renewable materials by the Ouzo Effect. The low energy method allows the preparation of functional nanoparticles without the addition of extra energy to create the particles or any surfactant to keep them stable in dispersion. Another important point of this system is the possiblility to create particles which are able to carry a payload and to be a targeted delivery vessel due to the enzymatic degradation of the polymer.
